You will need:

  • 2 cups red lentils
  • 1 tsp coconut oil
  • 1 onion, diced finely
  • 1 tsp turmeric powder
  • 2 apples, cored and grated
  • 2-3 cups of hot water
  • 1 1/2 cup coconut milk
  • 1 tsp cumin
  • 1 1/2 tsp of cinnamon
  • 1 tsp salt

Instructions:

  1. Rinse the red lentils with cold water and let them drain.
  2. Then, melt the coconut oil in a pot and sauté the onions until they become soft and golden.
  3. Add turmeric and apples, and cook for about two minutes, stirring frequently.
  4. After that, add the lentils and water. Bring the pot to a boil and simmer for 15 minutes, covered.
  5. Next, add the coconut milk and spices, and mix well.
  6. Simmer until the lentils become soft. You can add another cup of water if you want a thinner consistency. For best flavor, it is recommended to simmer for two hours.
